Coconut Lime Green Juice

IMG_0539This Coconut Lime Green Juice is the perfect hydration you need for warm Spring and Summer days.  It’s made with bright cucumber, green apple, ginger, and leafy greens so it’s packed with vitamins and minerals.  Lime juice, fresh mint leaves, and light coconut water give it a tropical feel to this green juice that will urge you to kick your feet up and enjoy.   Our Collagen Peptides add some filling protein that makes this great for breakfast or a refreshing afternoon snack.

Coconut Lime Green Juice

Yields: 3 c. juice

½ large cucumber

2 celery stalks

1 green apple

2 c. spinach

½ lemon (peel included)

2 chard or kale leaves

1 lime, peeled

2″ knob ginger

6-8 mint leaves

1 c. coconut water

1-2 scoops Vital Proteins Collagen Peptides


Roughly chop all the ingredients and put them through your juicer, according to the juicer’s instructions.  If you don’t have a juicer, you can blend everything and strain it through a fine sieve to remove the pulp.

Stir in the coconut water.   Add 1-2 scoops of Collagen Peptides per 8 oz. juice, as desired.  Best enjoyed within 12 hours of juicing.  Store extra in the refrigerator for up to 3 days.
