Hearty Chicken Soup

Boost your immune system or nurse sick loved ones back to health with this Hearty Chicken Soup.  Each bowl is packed with nutrients from vegetables and an easy homemade broth.  Both our Collagen Peptides or Beef Gelatin work well in this recipe (see notes below on how to implement each one) to get even more gut-loving nutrients.

Hearty Chicken Soup

6 c. water

1 lb. boneless chicken breasts or thighs

2 tbsp. avocado oil

2 large carrots, chopped

1 large onion, chopped

4 celery ribs, chopped

1 lb. potatoes, cubed

4 sprigs fresh thyme, leaves removed

2 dried bay leaves

2 c. spinach

1 tsp. sea salt

1 tsp. black pepper

1-2 scoops Vital Proteins Collagen Peptides, per serving*


Heat the water in a large pot over medium high heat with a large pinch of sea salt.  Once boiling, add the chicken and cover the pot.  Cook until done, about 10-15 minutes.  Skim any foam off of the top of the water and set the chicken aside to cool slightly. Once cooled, shred or chop into chunks.  Reserve the cooking water for later.

While the chicken is cooking, heat a new large pot over medium heat and grease with the avocado oil.  Add the carrots, onion, and celery and cook until translucent, about 5 minutes.  Add the potatoes, thyme leaves (removed from the stem), bay leaves, and the reserved cooking water.  Bring the water to a simmer and cook until the potatoes are tender, about 15 minutes.

Turn the heat off.  Fish out the bay leaves and stir in the spinach, sea salt, and black pepper.  Stir 1-2 scoops of Collagen Peptides into each serving of the hot soup, as desired.

*Note: our Beef Gelatin will work here, as well.  Just bloom 1-2 tbsp. gelatin to ¼ cup of cold broth before dissolving into the hot soup.
