Peaches & Cream Popsicles

popsiclesWith two deliciously swirly layers, these Peaches & Cream Popsicles are sure to sweeten your summer days.  One layer filled with yogurt and vanilla and another with juicy, ripe peaches and fresh lemon juice.  Mix in our Collagen Peptides for protein and an added nutritional boost.  They’re so good that you might need to make a double batch.

Peaches & Cream Popsicles

Yields: 6 3-oz. popsicles

For the creamy layer:

½ c. coconut milk

½ c. yogurt (or coconut cream for dairy-free)

1 tbsp. vanilla extract

3 tbsp. honey

2 scoops Vital Proteins Collagen Peptides

For the peach layer:

4 very ripe medium peaches, pitted

2 tbsp. fresh lemon juice

3 tbsp. honey



Add the creamy layer ingredients to a blender and blend until smooth.  Portion the mix into your popsicle mold, careful to only fill about halfway up.

Add the peach layer ingredients to the blender and blend until smooth.  Slowly pour the peach mix into the molds, careful not to mix the two layers together too much.

Move the molds to the freezer and freeze until solid.

Note: although your peaches may be very sweet, the honey added to these popsicles is necessary to keep them from getting icy when frozen.  Keep this in mind if choosing to cut back on the amount of honey used.
